So, do you counter that by having an offensive guy shadow him in motion? Of course, then the D can send a guy from both sides since the offense can't have two men in motion.

Easiest thing would be to get your FG team on the field in plenty of time, hard count as he approaches, and then wait to snap for him to go offsides, motion past, or slow down. Now that the trick play is out of the bag, it won't work as easily.
